1. Formulation example (based on 100 liters of finished beverage)
1 kilogram of dried corn silk, 60 grams of chrysanthemum, 50 grams of dandelion, 90 grams of cassia seed, 60 grams of wolfberry fruit, 90 grams of licorice, 8 kilograms of white granulated sugar, and 150 grams of citric acid.
2. Operation points
(1) Raw materials for corn silk
Raw materials are required to be fresh, shiny, and free of mildew. Maize filaments should have a strong fragrance. If raw materials are processed from sweet corn or waxy corn, dry, brown filaments on the top of the ear should be removed. Filaments should be placed in special baskets to avoid mixing with other impurities and sediment.
(2) Drying
The fresh filaments should be dried in a dry and ventilated place. The stalls should not be too thick and often turn. If it encounters rainy weather, it must be dried by a blower dryer. The temperature must not be higher than 50°C, and it should be frequently turned during drying to prevent mildew.
(3) Extracting raw silk juice
One kilogram of selected filaments were boiled in water at a ratio of 1:30 three times for 30 minutes. The extracts were combined and filtered through 4 layers of gauze.
(4) Extraction of Chinese herbal juice
Combine chrysanthemum, dandelion, cassia seed, wolfberry fruit, licorice and other Chinese medicines, boil three times according to the method of wolfberry medicine, and combine the extracts, and filter them with 4 layers of gauze.
(5) Deployment
The white granulated sugar is melted with 10 kg of clear water and heated to boiling; the citric acid is dissolved in a small amount of water. Mix filigree, traditional Chinese medicine extract with sugar water and citric acid water, add proper amount of caramel color, stir well, and add fresh water to 100 liters.
(6) Filtration, Filling, Sealing
The prepared beverage is pressed and filtered with cotton cake and then filled and sealed. The temperature of the beverage during filling must not fall below 80°C.
(7) Sterilization
Sterilization formula is 10 ~ 30 ~ 10/100 °C, that is 10 minutes to raise the temperature to 100 °C, constant temperature for 30 minutes, 10 minutes to reduce the temperature to 40 °C, if you use glass bottles, please be careful not to burst the bottle due to excessive cooling .
3. Quality Standard
(1) Sensory index
Color: It has the brown color and transparency of the corn silk drink. Odor and taste: It has the fragrance of the corn silk drink. The flavor is soft, sweet and refreshing, slightly Chinese taste, no other smell. Turbidity and impurities: No impurities, allowing a little turbidity.
(2) Physical and chemical indicators
Sugar content ≥ 8%, soluble solids ≥ 9 g/100 ml; arsenic (calculated as As) ≤ 0.5 mg/kg, copper (Cu) ≤ 5.0 mg/kg, lead (Pb) ≤ 1.0 mg/kg .
(3) Health indicators
The total number of bacteria (number of colonies) ≤ 100 cells/ml, E. coli cells ≤ 6 cells/100 ml, pathogenic bacteria cannot be detected.
